  • garlic: 1 piece (peeled and crushed)
  • bay leaf: 6 piece
  • peppercorn: 1 Tbsp
  • salt: 2 Tbsp
  • vegetable oil: 5 Tbsp
  • corn tortillas: 20 piece
  • salsa verde: 3 Tbsp (bottled or canned)
  • avocado: 0.5 piece
  • cilantro: 0.5 bunch (small)
  • red onion: 1 piece (chopped)
  • radish: 5 piece (thinly sliced, for garnish)

  1. Take a large deep pot and fill it with water. Put the beef tongue inside and add bay leaves, onions, crushed garlic cloves, salt and peppercorns. Bring to a boil, reduce to a simmer, cover, and cook for about 3 hours, until the tongue becomes soft.

  2. As soon as the tongue is ready, take it away from the pot and let it cool down for a while. Remove all the light-colored skin-like covering with a sharp knife or your fingers. Throw it away.

  3. Then slice the tongue into thin strips. Use as much tongue as you need to cook your tacos.

  4. Take a frying pan then, heat oil in it and sauté the tongue slices on medium fire. Make sure to fry the pieces on both sides until they become light brown. Remove the slices from the pot, let them cool down a bit and cut into cubes.
