Very easy and tasty, vegan butternut squash soup is ideal for weight loss. You may cook it for lunch or dinner, it is light. This soup full of vitamins, it is a real well of health.

Ingredients

  • vegetable oil : 4 Tbsp
  • water : 2 cup
  • spices : 1 tsp
  • salt : 1 pinch
  • nutmeg : 0.5 tsp
  • rosemary : 1 piece
  • vegetable broth : 800 ml
  • bulb onion : 1 piece
  • potato : 3 piece
  • butternut squash : 1 piece

Stages of cooking

  1. Wash and peel the butternut squash, then dice. Peel and dice potatoes, cut bulb onion.

  2. In a large saucepan, saute the bulb onion in vegetable oil until tender. Add squash, broth, nutmeg, salt, potatoes and spices. Cover with lid, bring to the boil and cook for 30 minutes or until squash is tender.

  3. Place vegetables into a bowl and add rosemary. Process with blender until it is smooth.

  4. Take a pan and pour in 2 cups of water, boil, add puree mixture. Do not allow to boil.

  5. Garnish with rosemary and serve with garlic toast.
