Thiese simple but tasty mini muffins will be vanished so quickly from the plate that you can easily double all ingredients to cook them if you have a big family. These muffins do tasty, ideal companion to the house cosiness.
- vegetable fat : 50 g
- vanilla sticks : 1 piece
- butter : 70 g
- blueberries : 200 g (dried)
- vanilla essence : 0.5 tsp
- egg : 1 piece
- buttermilk : 1 cup
- milk : 0.5 cup
- sugar : 4 Tbsp
- baking powder : 1 tsp
- salt : 2 pinch
- wheat flour : 0.5 cup
- corn meal : 1 cup
Stages of cooking
Pre-heat the oven to 200 C (390F) degrees. In a bowl mix corn meal, wheat flour, salt, sugar (2 Tbsp) and baking powder.
In another bowl mix milk, buttermilk and egg.
Pour carefully milk mixture over dry ingredients and stir properly.
Add vegetable fat, stirring all the time. It will make right texture of the muffins.
Add blueberries, vanilla essence and stir. Try to spread blueberries all over the dough. Add more blueberries or less, up to you.
Spoon the dough into a muffin tray cups. Bake during 10 minutes until golden brown.
Meanwhile make vanilla butter. Mix in a small bowl butter, sugar (2 Tbsp), vanilla stick.
Place butter in a little pot or cup and serve with muffins.
