- fennel : 1 tsp
- black olives : 1 Tbsp
- sugar : 1 Tbsp
- salt : 1 tsp
- oil : 50 g
- dry yeast : 1 tsp
- whey : 1 tsp (can be replaced with water)
- whole-wheat flour : 2.5 cup
- thyme : 1 pinch
- rosemary : 1 pinch
- garlic : 2 piece
- sesame : 20 g
Stages of cooking
Let’s make yeast dough first. It is better to use whey for this purpose, although, you can replace it with water. Warm up the whey a bit, add 1 tsp of yeast, salt, sugar and half of the flour.
Mix the ingredients, cover the pot and leave in the warm place for 30-60 minutes. Add oil and the rest of flour. Knead the dough. It should be soft, but it should not stick to your hands. Add spices, chopped garlic and black olives.
Divide the dough into two parts and form two flat cakes, spreading the dough on the bottom of the baking form with your fingers. Add sesame. Leave for 20 minutes at the table and then bake in the oven at 180 degrees for about 30 minutes.
While the flat cakes are still hot, you can cover them with a towel to make them a bit softer. If you want your Focaccia to become crispy, omit this step.
Warm Focaccia tastes delicious with Feta cheese and a cup of sweet coffee! Enjoy!
