This is my best chili recipe. After years of adjusting recipes that were either too spicy or too mild, everyone loves this. Even my fiancée who hates chili.
Ingredients
- olive oil: 4 Tbsp
- yellow onion: 1 piece (chopped)
- red bell pepper: 1 piece (chopped)
- Anaheim Chili pepper: 1 piece (chopped)
- red jalapeno pepper: 2 piece (chopped)
- garlic cloves: 4 piece (minced)
- ½ pounds lean ground beef: 2 piece
- Worcestershire sauce: 0.25 cup
- pinch garlic powder: 1 piece (to taste)
- beef bouillon cubes: 2 piece
- light beer (such as Coors®): 1 bottle (12 fluid ounce bottle)
- San Marzano tomatoes: 1 can (28 ounce can, crushed)
- fire-roasted diced tomatoes: 1 can (14.5 ounce can)
- tomato paste: 1 can (12 ounce can)
- white wine: 0.5 cup
- chili powder: 2 Tbsp
- ground cumin: 2 Tbsp
- brown sugar: 1 Tbsp
- chipotle pepper sauce: 1 Tbsp
- ½ teaspoons dried basil: 2 piece
- ½ teaspoons smoked paprika: 1 piece
- salt: 1 tsp
- oregano: 0.5 tsp (dried)
- ground black pepper: 0.5 tsp
- dark red kidney beans (such as Bush's®): 2 cans (16 ounce cans)
- sour cream: 1 cup
- fresh cilantro: 3 Tbsp (chopped)
- ground cumin: 0.5 tsp

Heat oil in a large pot over medium heat; cook and stir onion, bell pepper, Anaheim pepper, jalapeno peppers, and garlic in the hot oil until softened. Dotdash Meredith Food Studios

Meanwhile, heat a large skillet over medium-high heat. Cook and stir beef in the hot skillet until browned and crumbly, 5 to 7 minutes. Dotdash Meredith Food Studios

Add Worcestershire sauce and garlic powder. Crumble bouillon cubes over beef and add beer. Continue to cook , scraping any browned bits from the bottom of the skillet, until liquid is hot, about 3 minutes. Dotdash Meredith Food Studios

Stir crushed tomatoes, diced tomatoes, tomato paste, and wine to the beef mixture. Season with chili powder, 2 tablespoons cumin, brown sugar, pepper sauce, basil, paprika, salt, oregano, and black pepper. Dotdash Meredith Food Studios

Bring to a boil and reduce heat to medium-low. Cover and simmer until meat and vegetables are very tender and flavors have developed in the chili, about 90 minutes, stirring occasionally. Dotdash Meredith Food Studios
