These Buffalo Cauliflower Bites give you all the flavor of traditional buffalo wings with minimal carbohydrates. They’ll be a hit even with those not following a ketogenic diet. Serve these bites with a ranch dipping sauce.
Ingredients
- almond meal: 1 cup
- granulated garlic: 1 tsp
- dried parsley: 0.5 tsp
- salt: 0.5 tsp
- large egg: 1 piece
- large head cauliflower: 1 piece (cut into bite-sized florets)
- Frank’s RedHot sauce: 0.5 cup
- ghee: 0.25 cup

Preheat oven to 400°F. Line a baking sheet with parchment paper.

Combine almond meal, garlic, parsley, and salt in a large sealable plastic bag and shake to mix.

Whisk egg in a large bowl. Add cauliflower and toss to coat completely.

Transfer cauliflower to bag filled with almond meal mixture and toss to coat.

Arrange cauliflower in a single layer on baking sheet and bake 30 minutes or until softened and slightly browned.

While cauliflower is baking, combine hot sauce and ghee in a small saucepan over low heat.

When cauliflower is cooked, combine cauliflower with hot sauce mixture in a large mixing bowl and toss to coat.
