These Buffalo Cauliflower Bites give you all the flavor of traditional buffalo wings with minimal carbohydrates. They’ll be a hit even with those not following a ketogenic diet. Serve these bites with a ranch dipping sauce.

  • almond meal: 1 cup
  • granulated garlic: 1 tsp
  • dried parsley: 0.5 tsp
  • salt: 0.5 tsp
  • large egg: 1 piece
  • large head cauliflower: 1 piece (cut into bite-sized florets)
  • Frank’s RedHot sauce: 0.5 cup
  • ghee: 0.25 cup

  1. Preheat oven to 400°F. Line a baking sheet with parchment paper.

  2. Combine almond meal, garlic, parsley, and salt in a large sealable plastic bag and shake to mix.

  5. Arrange cauliflower in a single layer on baking sheet and bake 30 minutes or until softened and slightly browned.

  6. While cauliflower is baking, combine hot sauce and ghee in a small saucepan over low heat.
