This Irish colcannon recipe is a traditional Irish potato dish that's very easy to make. For unauthentic but enhanced flavor, you can add bacon bits or Cheddar cheese, or both.

- potatoes: 2 pound (cubed)
- head cabbage: 1 piece (chopped)
- bunch green onions: 1 piece (chopped)
- butter: 0.25 cup (softened)
- half-and-half cream: 0.5 cup
- salt and black pepper: (to taste)

Place potatoes, cabbage, and green onions into a large saucepan; fill with water and bring to a boil. Reduce heat, cover, and simmer until potatoes are tender, about 20 minutes.
