These goat cheese bacon pops taste like cheese balls with crumbled bacon and crushed nuts. They also have an appealing look, which can make them the highlight of any festive table. Try cooking them once and you won’t regret the choice!
Ingredients
- bacon: 6 piece
- goat cheese: 4 oz.
- cream cheese: 4 oz.
- honey: 1 Tbsp
- chili flakes: 1 pinch (dried; optional)
- cherries: 0.25 cup (dried; cranberries, blueberries, or other tart dried fruit work as well)
- herbs: 0.5 cup (fresh; I used parsley and chives)
- unsalted pecan halves: 0.5 cup

Take a frying pan and heat it on medium fire. Fry the bacon until it becomes crispy. As soon as the bacon is ready, put it on paper towels to get rid of extra oil. You can cook bacon in advance and store it in the fridge for a couple of days.

Mix goat cheese, honey, cream cheese, chili flakes, salt and black pepper in a food processor. Blitz for half a minute, stir the ingredients and mix once again. Put the mixture you have got into a small bowl and place into the fridge for about 10-20 minutes. The mixture should become frozen and solid. You can cook this mixture in advance as well and store it in the fridge for 2-3 days.

To cook the bacon topping, process dried cherries in a food processor for about one minute. It can take less time depending upon the power of the device. The cherries should be blended into tiny buts. Add fresh herbs and blend for a couple of seconds more. Then add pecans and bacon and repeat the step. Be very careful not to make the mixture butter-like. Spoon the topping into a separate bowl.

Take the cheese mixture out from the fridge and form small cheese balls. You can wet your hands a bit to simplify the process.

Now, roll the cheese balls in the bowl with the bacon topping.

Insert small sticks into your readymade cheese balls and leave them in a fridge until you plan to serve them. Enjoy!
