Sweet potatoes are delicious on their own, but it’s always tempted to gild the lily just a bit. Here, it’s mashed with butter, maple syrup and thyme to bring out their sweet, earthy flavor. You’ll need to allow one hour of hands-off cooking time to bake the potatoes, but you can make the whole dish ahead of time.
Ingredients
- sweet potatoes: 3 pound (medium-sized)
- unsalted butter: 6 Tbsp
- pure maple syrup: 6 Tbsp
- milk: 0.5 cup
- salt: 1 tsp
- black pepper: 0.25 tsp (freshly ground)
- thyme: 0.75 tsp (minced; fresh; plus a few sprigs for garnish)
