Ingredients
- olive oil: 3 Tbsp
- red wine vinegar: 1 Tbsp
- Dijon mustard: 1 tsp
- hot honey (such as Mike's Hot Honey®): 1 tsp
- salt and freshly ground black pepper: (to taste)
- Chicken Salad::
- cooked, shredded chicken: 2 cups
- (1/4 inch thick) slices lightly toasted French bread, cut into very small cubes: 2 piece
- tomatoes on the vine: 2 piece (diced)
- onion: 1 piece (sliced)
- celery: 2 Tbsp (minced)
- cilantro: 2 Tbsp (chopped)
- pimento-stuffed olives: 10 piece (halved)
- mini croissants: 8 piece

Whisk together olive oil, red wine vinegar, Dijon mustard, hot honey, salt, and pepper in a small bowl until well combined; set aside.

Add chicken, bread cubes, tomatoes, onion, celery, cilantro, and olives to a large bowl; mix well. Drizzle dressing over the chicken mixture, and stir until well combined. Taste and adjust seasonings, if necessary.
