Easy and delicious oven-baked chicken fajitas.

Ingredients

  • cooking spray:
  • red bell peppers: 2 piece (sliced)
  • onion: 1 piece (sliced)
  • skinless, boneless chicken breasts: 2 pound (cut into thin strips)
  • fajita seasoning mix: 1 pack (1 ounce pack, divided)
  • vegetable oil: 2 Tbsp (divided)
  • flour tortillas: 8 piece (6 inch)
  • sour cream: 0.5 cup (to taste)
  • salsa: 0.5 cup (to taste)
  • fresh cilantro: 0.5 cup (to taste, chopped)

  1. Preheat oven to 400 degrees F (200 degrees C). Spray a 9x13-inch glass baking dish with cooking spray.

  2. Spread red bell peppers and onion in the baking dish.

  3. Coat chicken strips with a few pinches of the fajita seasoning mix. Heat 2 teaspoons vegetable oil in a skillet over medium heat; cook and stir seasoned chicken until browned, about 2 minutes per side.
