These pumpkin cheesecake cookies are wonderfully soft and chewy with a delicious cheesecake center. They taste like fall.

- powdered sugar: 0.5 cup
- 1/2 teaspoons vanilla extract: 1 piece
- canned pumpkin: 0.5 cup
- 3/4 cups all purpose flour: 1 piece
- pumpkin pie spice: 1 Tbsp (divided)
- baking soda: 0.5 tsp
- salt: 0.25 tsp
- butter: 0.75 cup (softened)
- packed brown sugar: 0.75 cup
- white sugar: 0.5 cup (divided)

Place a frozen ball of the cream cheese mixture into the middle of the cookie dough, pressing the dough around the filling, then rolling with your hands to form a ball. Dotdash Meredith Food Studios

Roll ball in sugar and pumpkin pie spice mixture, then place on prepared baking sheet, about 3 inches apart. Repeat with remaining dough and filling.
