This tasty sautéed cabbage dish is an easy and healthy vegetarian cabbage side dish, and everything except the vegetable broth is fresh! Enjoy it as part of a meatless meal, or as a side dish for chicken or pork.
Ingredients
- olive oil: 1 Tbsp
- shallot: 1 piece (chopped)
- carrots: 0.5 cup (matchstick-cut)
- clove garlic: 1 piece (minced)
- green cabbage: 1 pound (chopped)
- vegetable broth: 0.5 cup
- fresh herbs, such as parsley, thyme, and rosemary: 2 Tbsp (minced)
- salt and freshly ground black pepper: (to taste)
- parsley sprigs: (for garnish, optional)

Heat olive oil in a large skillet with a lid over medium heat. Add shallot and carrots, and cook, stirring often, until shallots begin to soften, about 3 minutes.

Mix in garlic and cabbage and cook about 2 minutes, stirring often. Add vegetable broth and bring to a boil.

Sprinkle in minced fresh herbs. Season with salt and pepper. Cook, uncovered, about 3 minutes.

Reduce heat to low, cover, and cook, until cabbage is as tender as you like, 8 to 10 minutes.

Taste and adjust seasoning. Garnish with fresh parsley. Serve warm.
