Quick and easy scallop ceviche, just dice and mix!
Ingredients
- scallops: 0.5 pound (diced, fresh)
- clementines - peeled, segmented, and: 2 piece (diced)
- Roma tomato: 1 piece (diced)
- red onion: 0.5 piece
- scallions: 2 piece (sliced)
- lemon: 0.5 piece (juiced)
- lime: 0.5 piece (juiced)
- clove garlic: 1 piece (minced)
- cilantro: 1 Tbsp (to taste, chopped, optional)
- olive oil: 0.5 tsp
- sea salt: (to taste)

Combine scallops, clementines, tomato, red onion, scallions, lemon juice, lime juice, garlic, cilantro, and olive oil in a large bowl. Season with salt. Refrigerate until flavors combine, stirring occasionally, about 2 hours.
