Ingredients
- all-purpose flour: 3 cups
- white sugar: 0.25 cup
- baking powder: 4 tsp
- cream of tartar: 0.75 tsp
- butter: 1 cup (cubed, cold)
- heavy cream: 0.66667 cup
- egg: 1 piece (beaten)
- fresh strawberries: 3 cups (sliced)

Preheat the oven to 350 degrees F (175 degrees C).

Mix together flour, 1/4 cup sugar, baking powder, and cream of tartar in a large bowl. Cut in butter with a pastry blender or 2 knives. Stir in cream and egg until incorporated. Turn out onto a lightly floured surface.

Knead dough for 2 minutes. Press into a 1/2-inch-thick sheet. Cut into squares and place on baking sheets.

Bake in the preheated oven until golden, about 20 minutes. Allow shortcakes to cool.

Place strawberries in a medium bowl. Sprinkle with sugar; stir to combine. Split cooled shortcakes in half and spread with sugared berries.
