Shish tawook are tasty grilled chicken skewers that are served in every restaurant in the Middle East. You can easily make them at home and they'll taste just as good, if not better! Don't be tempted to substitute sour cream for the yogurt, as the yogurt works as a meat tenderizer.
Ingredients
- plain yogurt: 0.75 cup
- lemon juice: 0.25 cup
- vegetable oil: 0.25 cup
- garlic: 4 clove (minced)
- tomato paste: 2 tsp
- ½ teaspoons salt: 1 piece
- oregano: 1 tsp (dried)
- ground black pepper: 0.25 tsp
- ground allspice: 0.25 tsp
- ground cinnamon: 0.25 tsp
- ground cardamom: 0.125 tsp
- skinless, boneless chicken breast halves: 2 pound (cut into 2-inch pieces)
- onions: 2 piece (cut into large chunks)
- green bell pepper: 1 piece (cut into large chunks)
- fresh flat-leaf parsley: 1 cup (chopped)

Mix yogurt, lemon juice, oil, garlic, tomato paste, salt, oregano, pepper, allspice, cinnamon, and cardamom in a large bowl. Add chicken and toss to coat; transfer into a resealable plastic bag, squeeze out excess air, and seal the bag. Marinate in the refrigerator for 4 hours.

Preheat an outdoor grill for medium-high heat and lightly oil the grate.

Thread chicken, onions, and bell pepper onto metal skewers.

Cook on preheated grill until chicken is golden and no longer pink in the center, about 5 minutes on each side. Sprinkle parsley over the skewers.
