Nothing is better than a bowl of warm soup filled with cheesy pasta and meaty smoked sausage. Comfort food in 20 minutes!

Ingredients

  • olive oil: 1 Tbsp
  • medium onion, 1/2-inch dice: 1 piece
  • clove garlic: 1 piece (minced)
  • tomato paste: 1 Tbsp
  • Hillshire Farm® Smoked Sausage: 1 pack (14 ounce pack, cut into 1/4 inch slices)
  • tomatoes: 1 can (28 ounce can, diced)
  • chicken broth: 4 cups
  • cheese tortellini: 1 pack (9 ounce pack, fresh)
  • salt: 1 tsp
  • pepper: 0.25 tsp
  • baby spinach: 2 cups
  • Parmesan cheese: 1 Tbsp

  1. Heat oil in a large pot over medium heat. Saute onion and garlic in oil until soft, about 5 minutes. Stir in the tomato paste and smoked sausage and cook for an additional 3 to 4 minutes.

  2. Add the diced tomatoes, broth, tortellini, salt and pepper and bring to a boil. Reduce heat and simmer gently for 5 minutes, then stir in spinach and cook for an additional 3 to 4 minutes. Serve with a sprinkle of Parmesan cheese, if desired.
