  • oil: 1 Tbsp
  • eggs, lightly: 3 piece (beaten)
  • frozen stir-fry vegetables: 1 pack (16 ounce pack, thawed)
  • chicken broth: 1 can (14.5 ounce can)
  • soy sauce: 2 Tbsp
  • Minute® White Rice, uncooked: 2 cups

  1. Heat oil in a large skillet over medium heat. Cook beaten eggs in hot oil until set, stirring occasionally. Remove scrambled eggs to a plate; set aside.

  2. Add vegetables, broth, and soy sauce to the same skillet; bring to a boil. Stir in rice; cover. Remove from heat and let stand for 5 minutes.
