This quick and delicious recipe uses tempeh (cultured tofu) instead of meat for a healthy, tasty alternative.
Ingredients
- corn oil: 2 Tbsp
- tempeh, broken into bite-sized pieces: 1 pack (8 ounce pack)
- soy sauce: 2 Tbsp
- lime juice: 1 Tbsp
- ½ cups chopped green bell pepper: 1 piece
- mushrooms: 1 can (4.5 ounce can, drained, sliced)
- frozen chopped spinach: 0.5 cup (drained)
- green Chili peppers: 1 Tbsp (chopped)
- fresh cilantro: 1 Tbsp (chopped)
- minced onion: 1 Tbsp (dried)

Heat oil in a large skillet over medium heat. Saute tempeh with soy sauce and lime juice until tempeh browns. Stir in bell peppers, mushrooms, spinach, chile peppers, cilantro and dried onion.
