Cauliflower steaks are juicy and mildly nutty. The turmeric adds the perfect slightly bitter flavor to this hearty vegan meal. Cut the cauliflower into thick slices to leave you feeling satiated.

- cauliflower: 1 piece (whole, head)
- extra-virgin olive oil: 1 Tbsp
- ground turmeric: 1 tsp
- garlic powder: 0.5 tsp
- Salt: 0 tsp (to taste)
- Freshly ground black pepper: 0 tsp (to taste)

Preheat the oven to 400°F. Line a baking sheet with parchment paper.

Cut the cauliflower into 1½-inch slices lengthwise from the head through the core. Depending on the size of the cauliflower, you will get 4 to 6 flat pieces that resemble steaks. Place the slices in a single layer on the prepared baking sheet.

In a small bowl, mix together the olive oil, turmeric, and garlic powder. Brush the mixture onto both sides of the cauliflower steaks. Season with salt and pepper.
