Ingredients
- green lentils: 1 cup
- vegetable broth: 2 cups
- onion: 1 piece (chopped)
- garlic: 2 clove (minced)
- bell pepper: 1 piece (chopped)
- carrots: 2 piece (grated)
- oats: 1 cup
- tomato sauce: 0.5 cup
- soy sauce: 1 Tbsp
- olive oil: 1 Tbsp
- Salt, pepper, and Italian herbs: (to taste)

Preheat your oven to 375°F (190°C) and line a loaf pan with parchment paper.

Rinse the lentils and cook them in the vegetable broth according to the instructions on the package until they are soft.

While the lentils are cooking, heat the olive oil in a pan and sauté the onion, garlic, bell pepper, and grated carrots until they soften.

Once the lentils are done, drain any excess broth. In a large bowl, mash half the lentils using a potato masher or a fork.

Add the sautéed vegetables, the rest of the lentils, oats, tomato sauce, soy sauce and the spices to the bowl. Mix everything together.

Press the mixture into the loaf pan and level it with a spoon.

Bake the lentil loaf for about 45 minutes.

Let the loaf cool down a bit before cutting it into slices.
