Stages of cooking
-
Crush out the juice from tomatoes first. I have used 5 big tomatoes. As a result, I’ve got 500 ml of fresh juice
-
Wash the beef, dry it and cut into pieces around 3*3 cm each. If you don’t have beef at hand, you can replace it with pork
-
Peel and chop onion and garlic
-
Take a deep pot, pour tomato juice inside, add meat, onion and garlic. Then add oil and wine vinegar. Wait until the soup boils, adjust small fire, cover the pot with a lid and keep boiling for about 1.5 hours
-
Add salt, pepper and oregano
-
Wash and peel the potatoes and carrots. Chop them into large cubes and add to the soup. Boil for about 15-20 minutes
-
That’s it! Your “Estofado” soup is now ready! Serve hot with fennel or parsley. Bon appétit!
