This cheesecake with soft and gentle marshmallow cream is cooked without any baking involved! This is a great solution for working moms as well as for those situations, when you have to invite unexpected guests!
Ingredients
- berry syrup: 50 g (dense)
- milk: 300 g (for the cream)
- butter: 120 g (melted)
- lemon juice: 4 Tbsp (for the cream)
- shortbread cookies: 350 g (milled)
- cocoa powder: 3 tsp (mixed with cookies)
- mascarpone: 500 g (for the cream)
- marshmallow: 400 g (white, for the cream)

Prepare the products for your cheesecake to have them at hand during the cooking process

Mix milled shortbread cookies, sugar and powdered cocoa

Add melted butter to the cookies and mix everything well once again

Take the loose-base cake tin, the diameter of which should be 26 cm, spread the dough with your fingers thoroughly. Leave the base for the cheesecake in a fridge for about 20 minutes, while you will be cooking the cream

Cook the cream. Mix 250 g of mascarpone and 200 g of white marshmallow in a deep glass bowl. Place the bowl into a miscowave oven for 2 minutes at 800 Watt.

It is easier to cook the cream in 2 stages. Firstly, add 150 g of milk to the marshmallow and stir everything well. Add 2 tsp of lemon juice. Secondly, repeat the same procedure and then mix both parts.

Stir the cream well and pour it into a special form. Let the cream cool down a bit, but don’t let it set completely so that we could add the berry sauce and decorate the dessert

To decorate the cheesecake, take dense berry syrup and fill the syringe with it

Drop the syrup on the surface of the cheesecake, starting from the center of the cake (as it is shown on the photo)

Take the toothpick and join the drops, starting from the mid of the cheesecake. Do not take your hand away to get the design you see on the photo
