Stages of cooking
-

Start cooking the galette with making pastry dough. To do that, just cut the butter into cubes, take a large bowl and mix flour, salt, butter and sugar in it.
 -

Start kneading the dough, add sour cream and finely grated cheddar cheese. Mix once again.
 -

Knead the dough well and form a ball with your hands. Then make a disk out of the ball. Dredge with flour, wrap into kitchen film and leave in the fridge for about half an hour or more.
 -

Meanwhile, peel and cut the apples into quarters. Put the pieces into a bowl with water and lemon juice to prevent them from discoloring. Pre-heat the oven to 205 C (400 F).
 -

Take the apples from the water and slice them into 4-5 pieces lengthwise. Put them back into lemon water.
 -

Drain apple slices and put them into a bowl. Sprinkle with maple syrup and cinnamon. Add minute tapioca and lemon zest. Toss the apples well.
 -

Now, roll out the dough and put it on a baking pan covered with parchment paper.
 -

Arrange slices of apples on the dough in a circular pattern. They may overlap a bit.
 -

Dredge the galette with grated cheese and fold the edges of the dough.
 -

Take a small bowl and whisk one egg with one teaspoon of water in it. Brush the galette with the egg mixture using a pastry brush. Then dredge with coarse sugar.
 -

Bake in the pre-heated oven for about 10-15 minutes at 205 C (400 F). Then reduce the temperature to 190 C (375 F) and keep baking for about 15-20 minutes more. The apples should be well cooked and the crust should become light brown. Serve warm and enjoy!
