- cod fillets (around 130-150g each): 4 piece
- lemons (zested and juiced): 2 piece
- A handful of fresh thyme sprigs:
- olive oil: 2 Tbsp
- salt and black pepper: (to taste)
- bread: (for serving, fresh)

Preheat your oven to 200C/400F and line a baking tray with foil.

Place the cod fillets on the prepared tray and drizzle with 1 tablespoon of olive oil.

Sprinkle the lemon zest evenly over the fillets, followed by the juice of the lemons. Season with salt and black pepper.

Scatter the fresh thyme sprigs over the cod and place in the preheated oven.

Bake for 15-20 minutes, or until the cod is cooked through and flakes easily with a fork.
