If you have never tasted artichokes, then this recipe is definitely worth your attention! The taste of baked artichokes stuffed with delicious topping is so peculiar that it won’t leave you indifferent!
Ingredients
- globe artichokes: 2 piece (large)
- lemon: 4 piece (slices)
- lemon zest: 1 tsp
- dry bread crumbs: 3 cup
- parmesan: 0.5 cup (grated)
- parsley: 0.5 cup (chopped)
- garlic: 6 clove (minced)
- oregano: 1 tsp (fresh)
- olive oil: 2 Tbsp
- black pepper: 1 pinch
- bay leaf: 1 piece

Start cooking the dish with preparing the breadcrumbs. With this purpose, cut the crust off 6 slices of bread. Chop them and process well to get coarse breadcrumbs. Take a large bowl and mix lemon zest, breadcrumbs, minced garlic, Parmesan cheese, chopped parsley, mixed oregano, black pepper and 0.5 cup of olive oil in it. Set the bowl aside for a while and proceed cooking the dish.

Now, let’s prepare the artichokes for baking. Cut off the stem and take the scissors to cut off around 0.5 inches of the artichoke leaves tips. Cut one more inch from the top of it. Take a slice of lemon and rub over the cut edges to prevent them from browning.

Pre-heat the oven to 190 C (375 F). Open the center artichoke leave with your fingers as sown on the photo.

Stuff it with the mixture you have prepared. Stuff it between the leaves and in the center. Don’t forget to place the artichokes into the baking dish with the breadcrumbs.

Pour some hot water on the bottom of the baking dish, add 2 lemon slices, one bay leaf and 2 garlic cloves. Put the stuffed artichokes upright in the water. Sprinkle well with olive oil and cover with aluminum foil. Pierce with a sharp knife in several places and bake for about one hour until the artichoke leaves become so tender that you will be able to remove them one by one. Serve warm! Bon appétit!
