This is a Middle Eastern-style bean salad that is full of flavor.
Ingredients
- garbanzo beans: 2 cans (15 ounce cans, drained and rinsed)
- black beans: 2 cans (15 ounce cans, drained and rinsed)
- (packed) chopped fresh mint: 0.5 cup
- (packed) chopped fresh parsley: 0.5 cup
- onion: 0.5 cup (chopped)
- pint grape tomatoes: 1 piece (halved)
- jalapeño pepper: 1 piece (chopped)
- clove garlic: 1 piece (minced)
- olive oil: 0.25 cup
- lemon juice: 3 Tbsp
- apple cider vinegar: 5 Tbsp
- salt and ground black pepper: (to taste)

In a salad bowl, lightly mix together the garbanzo beans, black beans, mint, parsley, onion, and grape tomatoes.
