This banana nut oatmeal is a warm, filling breakfast cereal with a fruity twist. When my bananas begin to get overly ripe, I peel them and put them in plastic freezer bags. This recipe is great for frozen bananas, but you can also use ripe bananas.

Ingredients

  • quick cooking oats: 0.25 cup
  • skim milk: 0.5 cup
  • flax seeds: 1 tsp
  • walnuts: 2 Tbsp (chopped)
  • honey: 3 Tbsp
  • banana: 1 piece (peeled)

  1. Combine oats, milk, flax seeds, walnuts, honey, and banana in a microwave-safe bowl. Cook in the microwave on high for 2 minutes. Mash banana with a fork and stir into mixture. Serve hot.
