- olive oil: 0.25 cup
- medium lime: 1 piece (juiced)
- fresh cilantro: 3 Tbsp (chopped)
- onion: 2 Tbsp (finely chopped)
- garlic: 3 clove (chopped)
- ½ teaspoons ground cumin: 1 piece
- salt: 1 tsp
- ground black pepper: 1 tsp
- boneless New York strip steaks: 2 piece (8 ounce, cut into thin strips)
- white corn tortillas: 8 piece (6 inch, or more if needed)
- salsa: 1 jar (8 ounce jar)
- Mexican cheese blend: 1 pack (8 ounce pack, shredded)

Whisk oil, lime juice, cilantro, onion, garlic, cumin, salt, and pepper together in a bowl; pour into a resealable plastic bag. Add steak strips, coat with marinade, squeeze out excess air, and seal the bag. Marinate in the refrigerator for 4 to 8 hours.
