This beetroot appetizer with cabbage garnish and cottage cheese is cooked in a crock pot. It is delicious and makes it possible to cook healthy ingredients in an unusual way. The recipe is simple even for a newbie.

- beetroot: 800 g (small, peeled and cut into 1.5*2 pieces)
- apple: 1 piece
- wine vinegar: 3 Tbsp
- salt: 1 tsp
- black pepper: 0.5 tsp
- onion: 2 piece (one onion should be grated, while the second one should be sliced)
- cabbage: 1 piece (can be replaced with lettuce)
- garlic: 2 piece (sliced)
- olive oil: 2 Tbsp
- cottage cheese: 100 g

Juice the apple to get 125 ml of apple juice, pour it into the crock pot. Add beetroot, grated onion, vinegar, salt and black pepper. Cover the pot and cook at LOW regime for about 5 hours. Do not forget to stir the dish twice during this time.

As you see, the beetroot became very soft, but it retained its initial shape. Moreover, it has become sweet and juicy – an ideal ingredient for your appetizer!

Cut the upper cabbage leaves into thin strips 3 cm thick each. Chop the onion and cut the garlic into thin circles.

Heat a large frying pan, add oil, garlic and onion. Fry for 6 minutes until the onion gets softer. At the same time, it should not change the initial color. Add salt, pepper, cabbage and cover the pot. Stir every 2-3 minutes until the cabbage becomes soft. This may take about 20 minutes.

Put the cabbage on the serving dish. Cover it with a layer of beetroot and pour the sauce above. Add cottage cheese and serve the warm dish at once! By the way, this appetizer also tastes extremely delicious when served cold. You can add mayonnaise or any other sauce you like. Good luck!
