This is the best pan fried cod with tomatoes. It's lean, flaky, tender, and luscious. Although it's quick and simple to make, the savory and sweet tomato topping gives it a touch of elegance and great eye appeal.

  • pint grape tomatoes: 1 piece (halved)
  • shallot: 1 piece (sliced)
  • garlic: 2 clove (minced)
  • red wine vinegar: 1 Tbsp
  • olive oil: 1 Tbsp
  • capers: 1 Tbsp (drained, optional)
  • salt: 0.5 tsp (to taste)
  • 1/2 pounds cod filets: 1 piece
  • salt and freshly ground black pepper: (to taste)
  • olive oil: 2 Tbsp
  • unsalted butter: 1 Tbsp
  • parsley: 1 Tbsp (for garnish, chopped)

  1. Combine tomatoes, shallot, garlic, red wine vinegar, olive oil, capers, and salt in a bowl, and set aside.
