This black bean and corn salad is very colorful and includes a delicious lime and garlic dressing.
Ingredients
- olive oil: 0.5 cup
- lime juice: 0.33333 cup (fresh)
- garlic: 1 clove (minced)
- salt: 1 tsp
- ground cayenne pepper: 0.125 tsp
- black beans: 2 cans (15 ounce cans, drained)
- frozen corn kernels: 1.5 cups
- avocado: 1 piece (diced)
- red bell pepper: 1 piece (chopped)
- tomatoes: 2 piece (chopped)
- green onions: 6 piece (sliced)
- cilantro: 0.5 cup (fresh; chopped)

Place olive oil, lime juice, garlic, salt, and cayenne pepper in a small jar. Close the lid tightly and shake the jar until the dressing is well combined.
