This ham and hash brown casserole is quick and easy to make, not to mention delicious! I mostly serve this as a breakfast casserole, but it's great anytime. It may be served with or without diced ham.

Ingredients

  • cooking spray:
  • frozen hash brown potatoes: 1 pack (32 ounce pack)
  • condensed cream of potato soup: 2 cans (10.5 ounce cans)
  • sour cream: 1 container (16 ounce container)
  • sharp Cheddar cheese: 2 cups (shredded)
  • ounces cooked, diced ham: 8 piece
  • ½ cups grated Parmesan cheese: 1 piece
