  • ounces cooked, shredded chicken breast: 4 piece
  • onion: 0.5 cup (to taste, chopped)
  • broccoli: 0.5 cup (chopped)
  • coconut aminos: 1 Tbsp
  • garlic powder: 0.5 tsp
  • sea salt: 0.5 tsp
  • ground black pepper: 0.25 tsp
  • avocado oil: 2 Tbsp (divided)
  • stalk green onion, thinly sliced (green part only): 1 piece

  1. Mix together eggs, cooked chicken, onion, broccoli, coconut aminos, garlic powder, salt, and pepper in a bowl.

  2. Heat 1 tablespoon oil in a saute pan over medium-low heat. Add 1/3 of the egg mixture and cook for 2 to 3 minutes. Flip and cook the other side for 2 to 3 minutes. Repeat twice more to cook remaining 2 servings, adding remaining oil as needed.
