Quick, easy, and deliciously seasoned Cajun chicken stew. Serve over cooked rice.
Ingredients
- onion: 1 piece (chopped)
- green bell pepper: 1 piece (chopped)
- garlic: 3 clove (minced)
- rotisserie chicken, boned and: 0.5 piece (shredded)
- Creole seasoning (such as Tony Chachere's®): 1 Tbsp
- petite diced tomatoes: 1 can (28 ounce can)
- chicken broth: 1 can (16 ounce can)
- corn: 1 can (15 ounce can, drained)
- andouille sausage, sliced (such as Sam's Choice® All-Natural Cajun-Style): 1 pack (12 ounce pack)

Heat a pan over medium-high heat. Add onion, bell pepper, and garlic; saute until onion is translucent, about 5 minutes. Add shredded chicken and Creole seasoning. Mix thoroughly. Add tomatoes, chicken broth, corn, and sausage. Reduce heat and simmer until flavors come together, about 20 minutes.
