An easy Hoppin' John recipe for weeknight dinner that my kids love. Have it with a nice salad, and dinner is done. The red pepper should be adjusted to fit your family's taste.
Ingredients
- smoked beef sausage: 1 pound (cut into bite-size pieces)
- onion: 1 piece (chopped)
- black-eyed peas: 3 cans (15 ounce cans, drained)
- low sodium chicken stock: 2 cans (10.75 ounce cans)
- water: 1 cup
- cayenne pepper: 0.5 tsp (to taste)
- uncooked instant rice: 2 cups

Place sausage and onion into a large saucepan over medium heat; cook and stir until sausage begins to brown, about 10 minutes.

Stir in black-eyed peas, chicken stock, water, and cayenne pepper, and bring to a boil. Stir in rice; cover and cook, stirring occasionally, until rice is tender, 20 to 25 minutes.
