If you stick to the vegan diet, this does not mean that you should avoid desserts. These exotic muffins are one of the best desserts for vegans. Cook them right away to please your friends and family members!
Ingredients
- pitted dates: 200 g
- banana: 1.5 piece
- coconut oil: 200 ml (can be replaced with ordinary oil)
- flour: 230 g
- baking soda: 1 tsp
- vanilla sugar: 10 g
- cocoa powder: 1 tsp
- orange juice: 80 ml (fresh)

When added to the dough, sweet dates can easily replace sugar. Before using them in the process of cooking these exotic muffins, do not forget to wash and dry the pitted dates well.

Peel the banana. It is recommended to choose the one, which is soft.

Juice the orange to get 80 ml of fresh juice. If the fruit is too sweet, you can add 1 teaspoon of lemon juice.

Mix the pitted dates, the banana and fresh juice in a bowl and mash the ingredients to get a smooth mixture. You can use a blender, but in this case, there won’t be any pieces of fruits in the dough. This depends upon your taste. Then add oil and mix the dough once again. Leave 2 tablespoons of oil for the glaze.

Mix flour with baking soda, sift it and add to the dough. Mix the ingredients and add vanilla.

Spoon the dough into special muffin baking forms, filling them to 2/3. Bake in the pre-heated to 190 C (374 F) oven for about 30 minutes. Ready-made muffins will be light brown. Now, it is high time to cover them with glaze. To cook it, mix half of the banana with 2 tablespoons of oil and cocoa powder. Cover the muffins with the glaze and enjoy the dessert!
