A colorful and refreshing salad made with bell peppers and a variety of fresh herbs, perfect for summer.

Ingredients

  • large bell peppers: 2 piece (seeded and cut into rings)
  • small shallot: 1 piece (cut into rings)
  • red wine vinegar: 0.25 cup
  • Salt: 0 oz
  • extra-virgin olive oil: 1 Tbsp
  • chopped fresh mint: 1 Tbsp
  • chopped fresh basil: 1 Tbsp
  • chopped fresh parsley: 1 Tbsp
  • chopped fresh dill: 1 Tbsp

  1. In a large bowl, toss the sliced bell peppers and shallots in the vinegar. Sprinkle with salt. Let the salad sit for about 10 minutes so that the vinegar softens the peppers.
