A colorful and refreshing salad made with bell peppers and a variety of fresh herbs, perfect for summer.
Ingredients
- large bell peppers: 2 piece (seeded and cut into rings)
- small shallot: 1 piece (cut into rings)
- red wine vinegar: 0.25 cup
- Salt: 0 oz
- extra-virgin olive oil: 1 Tbsp
- chopped fresh mint: 1 Tbsp
- chopped fresh basil: 1 Tbsp
- chopped fresh parsley: 1 Tbsp
- chopped fresh dill: 1 Tbsp
