Gazpacho is a traditional Spanish soup, which is generally eaten cold. The dish is low in calories, which makes it a perfect solution for those, who are on a diet. The soup contains vegetables and spices most people like.
Ingredients
- tomatoes: 3 piece (large and soft)
- cucumber: 1 piece (large)
- sweet pepper: 1 piece (large)
- garlic: 1 clove
- French baguette: 1 piece
- lemon juice: 10 ml
- cod liver: 140 g
- olive oil: 4 Tbsp
- balsamic: 1 Tbsp
- sea salt: 1 pinch
- black pepper: 1 pinch
- chili pepper: 0.5 piece
- fennel: 1 bunch (or parsley)

Prepare all the ingredients mentioned in the list. Sprinkle the pieces of French baguette with a few drops of lemon juice

Crosscut the tomatoes, pour them with hot boiled water and remove the skins. Peel the cucumber and sweet pepper

Cut the vegetables large and blend them. Add bread with lemon juice, garlic, sea salt, black pepper, hot pepper, olive oil and balsamic

Blend all the ingredients once again to get a dense smooth Gazpacho soup. If it is too dense, add olive oil and chicken (vegetable) broth. Taste the dish, add salt, pepper, lemon juice and balsamic, if you feel that any of the ingredients is not enough. Stir the soup well. Place it into the fridge for about 30 minutes and serve it cold! This is very important!

Dry several pieces of the French baguette in the oven for a while. Pour the soup in several bowls or cups, add dried baguette pieces, a few drops of olive oil, pieces of cod liver and chopped fennel. The soup will taste superb, especially in hot summer! Enjoy!
