Onion soup is a traditional French dish, but this recipe will be a real surprise for everyone. This is because it contains… cabbage! The soup is dense, but very light, so if you are on a diet or stick to the vegetarian menu, this is exactly what you need!
Ingredients
- onion: 10 piece
- cabbage: 500 g
- carrots: 1 piece
- oil: 100 ml
- water: 1 litre
- salt: 1 tsp
- peppercorn: 5 piece
- bay leaf: 1 piece
- flour: 3 Tbsp
- fennel: 1 bunch
- lemon juice: 10 ml

Peel and chop the onion.

Cut the cabbage into strips.

Grate the carrot.

Take a large pot with a thick bottom. Warm up oil a bit and fry the onion, stirring it from time to time. The onion should become transparent and a bit golden.

Pour water into the pot, wait until it boils. Add cabbage and stir the soup well. Wait until it boils once again and add carrot, bay leaf, pepper and salt. Boil the soul one more time and cook on small fire under the lid. This process should take around 15 minutes.

Take a frying pan and warm up several tablespoons of oil in it. Add flour and fry it until it becomes creamy, stirring the ingredient from time to time. Add the flour to the soup, stir it, let it boil and take the pot away from fire. Wait for about 5 minutes before serving the dish.

When serving onion soup with cabbage, dredge it with chopped fennel and add lemon juice. Half of the teaspoon for a plate should be enough, although this depends upon the size of the plates you use. Lemon juice will give the dish peculiar sour taste. Enjoy!
