Ingredients
- olive oil: 0.5 cup (divided)
- green onions: 1 cup (sliced)
- carrots: 1 cup (shredded)
- eggs, lightly: 4 piece (beaten)
- ginger paste: 0.25 cup
- garlic: 2 Tbsp (minced)
- salt: 0.5 tsp
- day-old cooked white rice: 4 cups
- soy sauce: 0.25 cup
- oyster sauce: 1 Tbsp
- sriracha sauce: 2 tsp
- sesame oil: 0.5 tsp

Heat 1/4 cup olive oil in a large skillet over medium heat. Add green onions, shredded carrots, eggs, ginger paste, minced garlic, and salt. Stir gently until eggs are cooked through, 4 to 5 minutes. Transfer to a bowl.
