For a fast, fresh side, green beans, tomatoes, and kalamata olives are tossed with fresh herbs and red wine vinegar.
Ingredients
- olive oil: 1 Tbsp
- clove minced garlic: 1 piece
- steamed green beans: 4 cups
- tomatoes: 2 cups (chopped)
- Kalamata olives: 0.25 cup
- fresh herbs (such as parsley, tarragon, and/or basil): 3 Tbsp (for garnish, chopped)
- kosher salt: 0.5 tsp
- black pepper: 0.5 tsp (freshly ground)
- red wine vinegar: 1 Tbsp

Heat oil in a large pot over low heat. Add garlic; cook until fragrant, 45 to 60 seconds. Add green beans, tomatoes, olives, herbs, salt, pepper; toss. Drizzle with vinegar and toss to coat. Garnish with fresh herbs.
