Just have a look at these orange muffins! They don’t only look gorgeous, but they  taste so delicious! These muffins are very soft and your kids will love it.

Ingredients

  • flour: 2 cup (chickpea flour works best here)
  • baking powder: 1 tsp
  • salt: 0.5 tsp
  • ginger: 1 tsp
  • orange: 3 piece
  • maple syrup: 0.75 cup (or agave)
  • canola oil: 3 Tbsp
  • apple cider vinegar: 1 Tbsp

  1. Take a deep bowl and sift two cups of chickpea flour (all-purpose flour also works well) into it. Add one tablespoon of baking powder, 0.5 teaspoon of salt and one teaspoon of ginger.  Mix dry ingredients well.

  2. Peel orange zest and squeeze one cup of orange juice.

  3. Take another bowl and mix orange juice, zest, agave (or maple syrup), canola oil and apple cider vinegar in it.

  4. Now, combine dry and wet mixtures and stir the liquid dough carefully.

  5. Finally, pour the dough into the muffin molds so that it fills around 3-4 of each of them. The dough will rise while baking.

  6. Pre-heat the oven to 180 C (350 F) and bake orange muffins for about 25-30 minutes. Let them cool down a bit and enjoy!
