This rich and nutritious soup is absolutely savory and delicious! This is the vegan adaptation of one of the most popular Indian national soups. You and your loved ones will surely like it!
Ingredients
- red lentils: 2 cup
- tomatoes: 3 piece
- tomato paste: 1 Tbsp
- lemon: 0.5 piece
- vegetable oil: 2 Tbsp
- chili powder: 0.75 tsp
- salt: 1 tsp
- mint: 1 tsp (dried)

Wash, dry and peel the tomatoes first. In order to make the process easier, put your tomatoes in boiling water for about 20 seconds only and then rinse under cold water. Use the knife to make slight cuts and delete the skin. Right after that, cut the tomatoes into cubes.

Take a deep soup pot and heat up 2 tablespoons of vegetable oil in it over medium heat. Add chopped tomatoes and stir-fry for about 3 minutes.

Now, add 1 tablespoon of tomato paste, stir and cook for about 2 minutes together.

The next step is adding washed red lentils and pouring in 5 cups of water. Boil the water, turn the heat down, cover the pot and simmer for about 20-25 minutes.

Check the lentils. If they are soft and mushy, they are ready. Remove the pot from the stove.

It is high time to add spices now, such as salt, black pepper, chili pepper, mint and juice of 1/2 lemon. Blend the ingredients to get a smooth mass.
