This dessert was invented in Queensland, Australia, so, this is a traditional Australian dish! It got its name after the Governor of Queensland, Lord Lamington – the person, who was the first to taste the dessert. He liked it a lot, because it is very delicious! So, don’t hesitate and hurry up to cook the dessert for your loved ones!
Prior to cooking the dessert, pre-heat the oven to 180 C (350 F). Cover the baking pan with baking paper. Take a bowl and crack the eggs into it. Whisk them for about 10 minutes using a mixer. You should eventually get a creamy and dense mass.
Sift all the flour and add it to the whisked eggs. The batter should be smooth and creamy.
Pour or spoon the batter into a baking pan. Spread it well across the pan and carefully even the surface.
Bake in the pre-heated oven for about 35-40 minutes.
Let the dessert cool down a bit.
Meanwhile, cook the icing (the frosting). To do that, mix the required ingredients in a heatproof icing bowl over the water bath until the mixture becomes smooth. It should also be dense.
As soon as the cake cools down, cut it into 16 even pieces. Dip each piece in the icing on all sides. Allow the excess icing to drain off over the icing bowl.
Now, carefully roll each lamington in the shredded coconut on all sides.
Set your lamingtons aside for about 10-60 minutes depending upon their humidity.
