These heart-shaped cookies will be a great gift for your loved ones! They are also very tasty and healthy, because they don’t contain refined sugar and gluten. You can cook the dessert for any occasion or just to surprise your friends and family!

Ingredients

  • almond: 1.5 cup (raw)
  • dates: 12 piece
  • coconut: 0.5 cup (shredded)
  • maple syrup: 2 Tbsp (or agave)
  • salt: 1 pinch
  • cherry: 1 cup (frozen)
  • lemon juice: 0.5 tsp
  • chia seeds: 3 tsp (optional)

  1. Prior to starting cooking, soak 12 dates in warm water for about 30 minutes and thaw one cup of frozen cherries. Meanwhile, cook the dough. Grind 1.5 cups of almonds and 0.5 cup of shredded coconut. Mix the ingredients in a deep bowl.

  2. Now, process 8 dates in a blender to get smooth mixture.

  3. Combine the content of both bowls, add salt, maple syrup (or agave) and mix everything well to get nice dough. Put the dough into a freezer for about 15 minutes.

  4. Now, it is high time to cook the filling for your cookies! To do that, put the cherries into a sieve and use a spoon to press them well. This is needed to get rid of extra juice.

Blend the cherries, add the rest of the dates, 0.5 teaspoon of lemon juice and blend once again to get smooth mixture. If you wish, you can add 2-3 teaspoons of chia sees, but this is an optional step. Mix the mixture well one more time and leave it in the fridge for about half an hour to make it denser.

  6. Take a baking pan now and cover it with baking paper. Place the dough on the kitchen counter and roll it well.

  7. Now, take a heart-shaped cutter and cut out as many cookies as you can. Repeat the step until you have enough dough.

  8. Take another cutter of a smaller size and cut the holes in the center of each cookie.

  9. The next step is spreading cherry filling on each large cookie as it is shown on the photo.

  10. Then put the cookies with holes above and press them carefully. You can now spread more filling in the holes. Right after that, place the cookies into the fridge for about half an hour. Then take your heart-shaped linzer cookies out from the fridge, keep them under the room temperature for about 15 minutes and serve! Enjoy!
