This sheet pan dinner is amazing on its own or served with rice. The tofu pairs well with the broccoli, and the zesty teriyaki sauce brings it all together. It’s quick, full of flavor, and the perfect main course paired with rice.
Ingredients
- extra-firm tofu: 1 piece (none)
- low-sodium tamari or soy sauce: 2 tsp (none)
- extra-virgin olive oil: 1.5 tsp (none)
- cornstarch: 2 tsp (none)
- broccoli florets: 3 cups (none)
- Himalayan salt: 0 g (none)
- Freshly ground black pepper: 0 g (none)
- low-sodium tamari or soy sauce: 0.333 cup (none)
- water: 3 Tbsp (none)
- maple syrup: 2 Tbsp (none)
- rice vinegar: 2 Tbsp (none)
- garlic: 1 clove (grated)
- sriracha: 0.5 tsp (none)
- ground ginger: 0.25 tsp (none)
- cornstarch: 1 tsp (none, whisked together with 1 tsp water)

Preheat the oven to 400°F. Line a baking sheet with parchment paper.

Drain the tofu and pat dry with paper towels. Slice the tofu into even squares. Place the tofu between two paper towels, then put something heavy on top to press out the excess water. Let sit for 15 minutes.

Place the pressed tofu in a mixing bowl and drizzle with the tamari and olive oil. Sprinkle on the cornstarch. Toss evenly to combine. Arrange the tofu evenly on half of the prepared baking sheet.

In the same mixing bowl, combine the broccoli florets, salt, and pepper. Toss together until evenly coated. Arrange the broccoli evenly on the other half of the prepared baking sheet.

Bake for 25 minutes, tossing the tofu and broccoli after 12 minutes.

While the broccoli and tofu bake, prepare the teriyaki sauce. In a medium saucepan over medium heat, whisk together the tamari, water, maple syrup, vinegar, garlic, sriracha, and ginger.

Bring the sauce to a boil, then whisk in the cornstarch mixture. Reduce the heat to low and continue to whisk until the sauce thickens.

Remove the tofu and broccoli from the oven and place back in the mixing bowl. Remove the teriyaki sauce from the stove and pour into the mixing bowl, coating the broccoli and tofu. Serve over brown rice.
