- white sugar: 1 cup

- vegetable oil: 0.75 cup
- all-purpose flour: 2 cups

- buttermilk: 3 Tbsp
- pecans: 1 cup (chopped, optional)
- confectioners' sugar: 1 cup (or as needed)

Preheat oven to 300 degrees F (150 degrees C). Grease 14 muffin cups.
