A new interesting take on salmon marinated in tzatziki sauce grilled along with grape tomatoes, green peppers, and red onions.

Ingredients

  • tzatziki sauce: 0.5 cup
  • lemon, zested: 1 piece
  • lemon juice: 1 Tbsp
  • salmon fillets: 1 pound (cut into 1-inch cubes)
  • garlic: 2 clove (minced)
  • olive oil: 1 Tbsp
  • oregano: 1 Tbsp (dried)
  • medium green bell peppers: 2 piece (cut into 2-inch pieces)
  • pint grape tomatoes: 1 piece
  • red onion: 0.5 piece (cut into wedges)
  • feta cheese: 0.25 cup
  • more tzatziki sauce: (for serving)

  1. Combine tzatziki sauce, lemon juice, and lemon zest in a bowl. Add salmon, toss to coat, and marinate in the refrigerator for 15 minutes.
