If you have leftover pulled pork, with no sauce on it, turn it into sloppy Joe-type sandwiches for a twist on hamburger. Mini Kaiser rolls provide a sturdy, flavorful base for the sandwiches, which can be served alone as an appetizer, or as a main dish when accompanied by your favorite sides. We like fresh corn on the cob and coleslaw.

- unsalted butter: 2 Tbsp
- onion: 1 cup (finely chopped)
- green bell pepper: 0.66667 cup (finely chopped)
- beef stock: 1 cup
- ketchup: 1 cup
- brown sugar: 1 Tbsp
- Worcestershire sauce: 1 Tbsp
- whole-grain mustard: 1 Tbsp
- garlic: 4 clove (minced)
- chili powder: 1 tsp
- pulled pork without sauce: 2 cups (cooked)
- dashes hot pepper sauce (such as Tabasco®): 3 piece (to taste)
- salt and ground black pepper: (to taste)
- mini-Kaiser rolls, sliced and warmed: 10 piece

Melt butter in a large nonstick skillet over medium heat. Add onion and bell pepper, and cook, stirring, about 5 minutes. Add beef stock, ketchup, brown sugar, Worcestershire sauce, mustard, garlic, and chili powder; stir until well mixed.

Mix in pulled pork until well combined. Season with hot sauce, salt, and pepper. Bring mixture to a boil, reduce heat to low, and allow to bubble gently until thickened and reduced, 20 to 25 minutes.

Place about 1/2 cup of the mixture on each sliced mini Kaiser roll and serve immediately.
